Process
The tea leaves are harvested and processed into a green tea base during the early spring months (April-May) when the highest quality teas are made. The freshly made tea is then stored in ambient conditions until June when they are finished into the “pearl” shape by gently hand-rolling each leaf-set (bud, primary leaf and some stem) until it is “kneaded” into a tiny ball-shape resembling a pearl.
Once the jasmine petals are blooming in August-September, the fresh jasmine petals are purchased in the open-air jasmine markets in Fujian during peak quality season. The fresh jasmine petals are laid out in direct contact with the hand-rolled pearls, and the jasmine scent is absorbed by the tea (the extreme heat and humidity in the region also helps to promote the scenting process). The higher quality jasmine pearls are scented up to 3-5 times to increase the depth and complexity of the jasmine character.
Once the scenting is completed, all of the jasmine petals are removed (hand-sorted) from the tea, and the finished tea is dried one final time to remove any residual moisture content, and to fix the flavor of the tea before final packing.
